The evening begins with Heritage Craft Butchers charcuterie and Emerald Valley Artisans cheese. Guests are encouraged to mingle and get to know the others who are partaking in the experience!
Dinner follows, consisting of a roasted pork entree and sides, prepared by Wes Cannon, the Chief Flavor Officer at HCB.
After dinner, the butchery portion of the evening commences. Bob and Jared work through half of a locally-raised heritage breed pig and explain the steps involved in turning a whole beast into a variety of retail cuts and cured items. They will offer interesting bits of esoteric information related to butchery, cuisine, and language while elaborating on the cultural differences in preparing pork. Guests are encouraged to ask questions and interact.
Seats are limited so RESERVATIONS ARE REQUIRED. Tickets are $65 per person. Drinks are not included.
